Hummus

Serves 8
Ingredients
  • 1/2 cup sesame seeds
  • 3 tablespoons grape seed / extra-virgin olive oil
  • 1 15oz cans garbanzo (chickpeas) drained and rinsed
  • 1 tablespoon fresh lemon juice, more to taste
  • 2 garlic clove
  • 1/2 teaspoon sea salt
  • 3 tablespoons water, or as needed to blend
  • paprika, red pepper flakes, or parsley for garnish
Directions
  1. Roast sesame seeds for 2-3 mins on med heat. DO NOT OVER-ROAST to avoid bitterness.
  2. Add sesame seeds to the bowl of a food processor then process until a crumbly paste, about 1 minute.
  3. Add 3 tablespoons of the oil, then process for 2 to 3 minutes more, stopping to scrape the bottom and sides of the food processor a couple of times. Check the consistency. It should be smooth, not gritty, and should be pourable.
  4. Using a hand blender - combine the chickpeas, sesame butter, lemon juice, garlic, and salt. Blend until smooth, adding water as needed to reach your desired consistency.
