Ingredients
- 1/2 cup sesame seeds
- 3 Tbsp extra-virgin olive oil
- 1 15oz cans garbanzo (chickpeas) drained and rinsed
- 1 Tbsp lemon juice, more to taste
- 2 garlic cloves
- 1/2 tsp sea salt
- 3 Tbsp water, or as needed to blend
- paprika, red pepper flakes, or parsley for garnish
Directions
- Roast sesame seeds for 2-3 mins on med heat. DO NOT OVER-ROAST to avoid bitterness.
- Add sesame seeds to the bowl of a food processor then process until a crumbly paste, about 1 minute.
- Add 3 Tbsp of the oil, then process for 2 to 3 minutes more, stopping to scrape the bottom and sides of the food processor a couple of times. Check the consistency. It should be smooth, not gritty, and should be pourable.
- Using a hand blender - combine the chickpeas, sesame butter, lemon juice, garlic, and salt. Blend until smooth, adding water as needed to reach your desired consistency.
