Coconut Rice

Serves 6
Ingredients
- 2 cups jasmine rice
- 1 can (14 oz) full fat coconut milk
- 1 cup water
- 5 tsp white sugar
- 1/2 tsp salt
Directions
- Measure the Jasmine rice and place it in a colander. Run water through it and rinse it several times until the water runs clear. Allow the water to drain completely.
- Place the rice in the instant pot then add coconut milk, salt, sugar and the water.
- Cover the instant pot with its lid and turn the valve to the sealed position.
- Use the RICE preset option; should be Low Power for about 12 minutes.
- Once it is finished cooking and time is up, allow the pressure release for 5+ minutes then do a quick release by turning the valve to release position.
- Allow the rice to cool before fluffing it.
