Coconut Rice

Serves 6
Ingredients
  • 2 cups jasmine rice
  • 1 can (14 oz) full fat coconut milk
  • 1 cup water
  • 5 tsp white sugar
  • 1/2 tsp salt
Directions
  1. Measure the Jasmine rice and place it in a colander. Run water through it and rinse it several times until the water runs clear. Allow the water to drain completely.
  2. Place the rice in the instant pot then add coconut milk, salt, sugar and the water.
  3. Cover the instant pot with its lid and turn the valve to the sealed position.
  4. Use the RICE preset option; should be Low Power for about 12 minutes.
  5. Once it is finished cooking and time is up, allow the pressure release for 5+ minutes then do a quick release by turning the valve to release position.
  6. Allow the rice to cool before fluffing it.
