Butter Chicken

Serves 6
Ingredients
  • 3 Tbsp butter
  • 2 lbs chicken; diced
  • 5 cloves garlic; minced
  • 2 in fresh ginger grated
  • 1 tsp ground cumin
  • 2 tsp garam masala
  • 1/2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground turmeric
  • 1 tsp salt
  • 15 oz (can) tomato sauce
  • 1/2 cup heavy cream
Directions
  1. In a frying pan, heat vegetable oil and melt the butter.
  2. Add the garlic and ginger, and cook until fragrant (about 1 minute).
  3. Brown the diced chicken breast until golden.
  4. Add all of the spices, and the salt, stir and cook for a minute then add the tomato sauce.
  5. Give everything a mix, cover with a lid and simmer on medium heat for 5-10 minutes for the chicken to cook and the flavors to settle.
  6. Carefully open the lid, and stir in the cream, and allow the sauce to reduce a little.
