Chicken Tikka Masala

Ingredients
  • 2 1/2 lbs chicken breasts cut into 1-2 inch cubes
  • 5 cloves minced garlic
  • 1 1/2 large onion diced
  • 2 1/4 Tbsp garam masala
  • 1 1/2 tsp ground coriander
  • 1 1/2 tsp cumin
  • 3/4 tsp paprika
  • 2 1/4 tsp sea salt
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp turmeric or curry
  • 15 oz can tomato sauce
  • 1/2 cup chicken broth
  • 1 can (14 oz) full fat coconut milk
  • tapioca flour/starch
Directions
  1. Use a large "saute" pan and olive oil.
  2. Once hot, add in onion, garlic, and all of the spices. Stir 1-2 minutes until the onions begin to soften and the spices are very fragrant.
  3. Add in chicken pieces and continue to stir for 2-3 more minutes until slightly browned. Add in tomato sauce and chicken broth and stir to combine.
  4. Stir in coconut milk and simmer for 30 minutes.
  5. Add tapioca flour/starch if needed.
