Chicken Tikka Masala

Ingredients
- 2 1/2 lbs chicken breasts cut into 1-2 inch cubes
- 5 cloves minced garlic
- 1 1/2 large onion diced
- 2 1/4 Tbsp garam masala
- 1 1/2 tsp ground coriander
- 1 1/2 tsp cumin
- 3/4 tsp paprika
- 2 1/4 tsp sea salt
- 1 1/2 tsp chili powder
- 1 1/2 tsp turmeric or curry
- 15 oz can tomato sauce
- 1/2 cup chicken broth
- 1 can (14 oz) full fat coconut milk
- tapioca flour/starch
Directions
- Use a large "saute" pan and olive oil.
- Once hot, add in onion, garlic, and all of the spices. Stir 1-2 minutes until the onions begin to soften and the spices are very fragrant.
- Add in chicken pieces and continue to stir for 2-3 more minutes until slightly browned. Add in tomato sauce and chicken broth and stir to combine.
- Stir in coconut milk and simmer for 30 minutes.
- Add tapioca flour/starch if needed.
