Beer Cheese Soup

Serves 6
Ingredients
  • 3/8 cup flour
  • 1/2 cup butter
  • 1 onion
  • 3 cloves garlic
  • 1 1/2 cups cream
  • 4 cups chicken stock
  • 16 ounces Velveeta
  • 12 ounces of beer (Miller Lite)
  • 1 tablespoon Worcestershire sauce
  • hot pepper sauce
  • salt, to taste
  • yellow food coloring
Directions
  1. Melt butter in large saucepan on medium heat. Add onions and garlic; cook 3 minutes or until tender, stirring frequently. Add flour, mix well. Cook 2 mins or until hot and bubbly, stirring frequently.
  2. Stir in cream until blended stirring well to keep the mixture smooth. Add chicken stock and cook until thickened. Simmer on low heat 5 mins, stirring occasionaly.
  3. Add Velvetta stirring until melted and until well blended.
  4. Add beer, Worcestershire sauce, hot pepper sauce and approximately 10 drops of yellow food coloring, and salt (to taste)
  5. Simmer about 15 minutes, or until desired thickness.
Notes

This Beer Cheese soup recipe originated at The Grainery restaurant at West Acres mall in Fargo, ND from 1973 until it was sold and eventually went out of business. This recipe is also on the menu at the Barnstormer Restaurant at Hector Airport and eventually sold on a retail basis in area supermarkets.

COMMENT: Due to some online debates, I contacted the Barnstormer and an employee confirmed the use of Velveeta, the addition of onions and garlic, seasonings and Miller Lite beer.
