Ingredients
- 1 small onion, minced
- 3 Tbsp butter
- 4 cup whole kernel corn
- 1 can (15 oz.) of diced tomatoes, with the liquid
- 2 Tbsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup sharp cheddar cheese, grated
Directions
- To begin, preheat your oven to 375 degrees.
- In a small skillet, saute the minced onion in butter until tender but not browned.
- Combine the onion, butter and all remaining ingredients in a bowl.
- Pour it into a baking dish, and bake for 1 hour.
