Baked Corn

Arizona-style
Serves 6
Ingredients
  • 1 small onion, minced
  • 3 Tbsp butter
  • 4 cup whole kernel corn
  • 15 can (15 oz.) of diced tomatoes, with the liquid
  • 2 Tbsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup sharp cheddar cheese, grated
Directions
  1. To begin, preheat your oven to 375 degrees.
  2. In a small skillet, saute the minced onion in butter until tender but not browned.
  3. Combine the onion, butter and all remaining ingredients in a bowl.
  4. Pour it into a baking dish, and bake for 1 hour.
