Apple Slaw

Serves 6
Ingredients
  • 2 cosmic crisp apples (cut into matchsticks or small thin slices)
  • 3 medium stalks of celery (sliced very thin on a diagonal)
  • 3 cups green cabbage (shredded thin)
  • 2 green onions (thinly sliced)

The Vinaigrette:

  • 3 Tbsp apple cider vinegar
  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp honey
  • 1 tsp Dijon mustard
  • Salt and fresh cracked black pepper (to taste)
Directions
  1. Prep the Veggies & Apples: Shred your cabbage and green onions. Slice the celery stalks thinly on a sharp angle to create nice, wide pieces. Cut your apples into matchsticks, leaving the skin on for a bright pop of color.
  2. Whisk the Dressing: In a small bowl, vigorously whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper until completely smooth and emulsified.
  3. Toss to Coat: In a large mixing bowl, combine the apples, celery, cabbage, and green onions. Pour the vinaigrette over the top and toss thoroughly to ensure everything is evenly coated.
  4. Chill & Rest: Let the slaw sit in the refrigerator for about 10 to 15 minutes before serving. This brief rest lets the flavors meld and softens the cabbage just enough while maintaining a loud, satisfying crunch.
